Bikini Blonde Beer Chili

Ingredients

• • 1 pound Maui Cattle Co. ground beef
  • 1/2 pound diced Portuguese sausage
  • 1 1/2 tbsp. olive oil
  • 3/4 cup red onion diced
  • 1 1/4 cup red bell pepper diced
  • 1 1/4 cup green bell pepper diced
  • 1 1/2 tbsp chopped garlic
  • 4 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp dried oregano
  • 1 tbsp kosher salt
  • 1 1/2 tbsp Tabasco sauce
  • 1 1/2 tbsp brown sugar
  • 6 tbsp tomato paste
  • 1 can Bikini Blonde Beer - Maui Brewing Co.
  • 2 1/2 cups canned diced tomato
  • 2 1/2 cups canned kidney beans drained

1. 1. In a large pot brown ground beef in olive oil over medium high heat
   2. Add chopped garlic and red onions, cook until onions are soft
   3. Add red and green peppers, Portuguese sausage and sauté 5 minutes
   4. Add chili powder, cumin and dried oregano, mixing well
   5. Stir in tomato paste and combine everything together well, continue cooking 5 minutes stirring continuously
   6. Pour in beer, diced tomato, tabasco, salt and sugar, bring to a simmer for 30 minutes
   7. Add drained beans and simmer for another 30 minutes

2. Garnish

   1. Grated smoked cheddar, crispy fried onions and cilantro sprigs
