Fried Apple Pie

Ingredients
-
Pie Dough
- Cake flour - 375 grams
- Sugar - 62 grams
- Butter - 188 grams
- Yolks - 30 grams
- Water - 94 gram

Apple Filling
- Granny Smith Apples - 10
- Butter - 70 grams
- Cinnamon - 2 grams
- Corn starch - 20 grams
- Salt - 1 gram

Green apple mint granite
- Juice of green apple - 315 grams
- Citric acid - 6 grams
- Fresh mint leaves - 14 grams
- Granulated sugar - 56.5 grams

Honey Walnuts
- Chopped walnuts - 75 grams
- Brown sugar - 15 grams
- Honey - 15 grams
- Butter - 10 grams
- Salt pinch
Preparation

Pie Dough
- Mix together dry ingredients with butter on low speed until combined
- Add liquid ingredients and mix until combined( refrigerate and rest dough)
- Sheet dough to 1.5 thickness, cut 2 by 3 inches ( each dessert needs 2 strips)
- Deep fry dough strips, drain excess oil then sprinkle with cinnamon sugar

Apple Filling
- In a pot, combine apples and butter; heat until liquid boils
- Whisk together sugar, corn starch, cinnamon, and salt. Pour into apples and stir continuously until filling thickens.
- Remove from heat and store into refrigerator

Green apple mint granite
- Place citric acid in a shallow container (small enough to fit under a juicer)
- Juice apple and mint leaves (together) allowing juice to collect in container with citric acid and mixing juice occasionally to ensure citric acid is fully incorporated.
- Add sugar to juice and stir to dissolve
- Freeze

Honey Walnuts
- Mix everything
- Bake on a parchment paper at 350 degree for 5 minutes and mix
- Bake for two minutes and mix repeat step two 2 more times
- As mixture is cooling, pick apart individual pieces
