Lobster & Prawn Grilled Cheese

Ingredients

• • 1 French baguette
  • 3 slices gruyere cheese
  • 3 slices smoked white cheddar
  • 4 oz. lobster tail
  • 3 ea. 16/20 shrimp
  • 1 tsp chives sliced
  • 1 oz. shallots julienne, caramelized
  • 2 tbs butter

1. 1. Melt 1 tablespoon of butter, add shallots. Cook over medium heat, tossing occasionally, until the shallots start to brown.
   2. Add lobster tail, shrimp and chives toss to coat and cook until shrimp and lobster are cooked through.
   3. Take 2 slices of Gruyere and 2 slices of smoked cheddar and layer one slice of each on top of the non-buttered side of the bread, then repeat on the other piece of bread.
   4. Pour half of the lobster and prawn mixture on top of one slice of bread (cheese side up), then repeat to the other half.
   5. Place bread buttered side down in a preheated sauté pan over medium heat. Cover with a lid and let cook for 4-6 minutes or until bread golden and cheese is melted.
   6. Serve as is for an open face sandwich or take the other piece of bread and place it on top to form the sandwich (cheese side face down on top of the lobster and shrimp).
