Deep Dish Apple Pie

Ingredients
- Yield:
- 1 Pie

Pie Dough
- Butter 12 oz
- Flour 1 Pound
- Milk ½ Cup
- Salt Pinch
- Egg Yolks 2 ea

Pie Filling
- Fuji Apple 6 ea
- Macintosh Apples 6 ea
- Sugar 1 Cup
- Dark Brown Sugar 1 Cup
- Molasses 1 Teaspoon
- Cinnamon 1 Tablespoon
- Oranges 1 ea
- Lemons 1 ea
- Butter 8 oz
- Corn Starch ¼ Cup Organic
- Organic Apple Juice 1 ½ Cups

Cinnamon Oat Streusel
- Flour 1 Cup
- Brown Sugar 1 Cup
- Salt Pinch
- Butter 8oz
- Cinnamon Pinch
- Oats 1 Cup
- Pecans 1 Cup
Preparation

Pie Dough
- In a large bowl, combine the flour and butter by hand until pea size pieces are formed
- Add the egg yolk and milk and mix until a paste starts to form
- Add the salt and finish mixing until dough is formed
- Let rest for a couple of hours in the refrigerator
- Roll out the dough to cover a deep dish pie pan and gently press into the corners
- Trim excess and place in fridge to cool (2-3 hours)
- Cover pie with tin foil and fill with dried beans or pie weights
- Bake at 350*F for 15 min
- Cool

Pie Filling
- Peel, quarter and thinly slice the apples
- Zest the lemon and orange onto the apple then squeeze the juice of each onto the apples
- Let rest
- Heat the apple juice till almost boiling
- Combine the corn starch, sugar, brown sugar then add to the hot apple juice
- Bring to a boil and cook for 1 min
- Once done place in a bowl and allow to cool
- Cut the butter into small cubes
- Combine the cinnamon, butters and fresh apples in a bowl
- Combine the apple mixture with the cool apple juice mixture from earlier
- Place into the deep dish pie pan and mound in the center

Cinnamon Oat Streusel
- Combine all ingredients in a bowl and bring together
- Cool and use as needed
- Cover the pie with the oat topping and bake at 325*F for 20-25 min or until done
- Cool and Enjoy
