Welsh Rarebit by Chef John Cordeaux

Ingredients

• • 2 cups Five Year Wisconsin White Cheddar, Grated
  • 4T Wisconsin Brewing Company American IPA
  • 3-5 Dashes Tabasco
  • 3-5 Dashes Worcestershire
  • 2 Egg Yolks
  • 4T Whipping Cream, whipped
  • Flour
  • Crusty Sourdough

1. 1. Preheat Broiler.
   2. Melt Cheese in a sauce pan over low heat.
   3. Remove from heat.
   4. Add flour as needed to absorb oil.
   5. Add Beer, Tabasco, Worcestershire, salt and pepper, stir.
   6. Add 2 egg yolks, stir.
   7. Add whipping cream, stir.
   8. Cool until cheese sauce is no longer runny.
   9. Toast slices of bread under the broiler just until bread starts to brown. Do not over toast.
   10. Smear cheese on the untoasted side of the bread. Return to broiler until light golden brown.
