Waterlot Inn's "Monty the Turtle" Chicken Noodle Soup

  • 10ml Vegetable Oil
  • 50g White onion, diced
  • 25g Celery, diced
  • 15g Red Pepper, diced
  • 15g Green pepper, diced
  • 5g shallot, diced
  • 5g Garlic, crushed
  • 1g Hungarian Paprika powder

• B

  • 1L Chicken Stock
  • 50ml Dry White Wine
  • 5ml Fresh Lemon Juice

• C

  • 25g Cooked Chicken meat, diced
  • 12pcs Monty the Turtle pasta or 50g broad pasta noodles, cut 3cm long & half cooked

• D

  • 2g Chives, finely chopped

1. 1. Place (A) into a sauce pot and sweat out the vegetables.
   2. Add (B) and simmer on low for 25 minutes. Add
   3. Add (C) and continue to cook for 7 minutes. Add salt and ground black pepper to taste.
   4. Ladle soup into 4 bowls. Garnish soup with (D).
