Ingredients

Pizza Dough & Filling
- 200gr OO pizza flour
- 132ml water (warm)
- 1gr fresh yeast
- 2gr salt
- 3gr sugar
- 75gr tomato sauce
- 70gr mozzarella block
- 50gr goat cheese
- 30gr beef salami
- 5gr baby rocket
- 35gr button mushrooms
- 8gr caper berries
- 5gr parmesan flakes

Pizza Dough & Filling
- Make a pre dough with the yeast and part of the flour and sugar, get the yeast activated, mix all the dry ingedients
- Add them into the pre dough and finish with the warm water. Cut into balls of 200 gr, place them on a sheet tray
- Cover with plastic wrap let rise for 8 hours. Before service roll the dough, add tomato sauce, mozzarella & goat cheese, mushrooms.
- Bake in a preheated oven 425F for 5 minutes. Remove the pizza cut into cemetrical pieces and finish with the salami
- Add baby rocket, caper berries parmesan and a touch of Extra Virgin Olive oil.
