• Mussel Pie Filling Ingredients

  • 5 lbs mussel meat (cooked)
  • Water or Fish Stock
  • 1 lb diced carrots
  • 1 lb diced celery
  • 1 lb diced onion
  • 1 lb diced potatoes
  • 1/2 lb butter
  • 1/2 lb flour
  • Curry powder
  • Thyme
  • Salt
  • Pepper

• Pastry Ingredients

  • 725 g pastry flour
  • 450 g shortening
  • 11 g salt
  • 34 g sugar
  • 300 ml cold water

1. Mussel Pie Filling Preparation

   1. In a saucepan, place mussels with water or fish stock until covered. Bring to boil.
   2. Strain liquid from mussels, reserving to the side for later. Put mussels on side.
   3. Saute onions and celery in the butter until tender.
   4. Add the flour and curry powder to taste.
   5. Stir and cook slowly under low heat for 10 minutes, adding reserved liquid as-needed.
   6. Add the carrots, potatoes. Add thyme, salt, and pepper to-taste and let simmer over low heat for 30 minutes.
   7. Add mussels, mix well, serve as required.

2. Pastry Preparation

   1. Mix flour and shortening until crumbly.
   2. Add water, salt, and sugar. Mix until combined, do not over-mix.
   3. Let rest for 20 minutes.
   4. Roll out and cut to desired sizes.

3. Mussel Pie Preparation

   1. Preheat oven to 350 F.
   2. Add mussel pie filling into pastry and form into small pie-shapes.
   3. Bake for 25 minutes or until pastry is golden brown.
