Cinnamon Star Cookie with Royal Icing

Ingredients

Yield:

25 - 30 cookies

• Cinnamon Star Cookie Ingredients

  • 1 lb white sugar
  • 30 ml corn syrup
  • 4 egg whites
  • 15 gms cinnamon powder
  • 595 gms almond flour

• Royal Icing Ingredients

  • 175 gms icing sugar
  • 15 gms corn starch
  • 2 egg whites

1. Cinnamon Star Preparation

   1. Combine all ingredients together to form a dough.
   2. Refrigerate for 2 hours.
   3. Roll the dough to 6mm thick, using flour to prevent sticking.
   4. Place on sheet baking pans, spread on royal icing.
   5. Refrigerate for 30 minutes.
   6. Using cookie cutters, cut out star shapes.
   7. Bake for 275 F for 5-6 minutes. Remove from oven before the icing changes from its white colour.

2. Royal Icing Preparation

   1. * Do not use any lemon juice when making royal icing, instead add a small amount of corn starch. This prevents the icing from browning in the oven.
   2. Combine all ingredients.
