Mole de Olla (Caribbean Style)

Ingredients

• • 1 pz corn cut into four lengthwise
  • 2 pz carrots peeled and cut into slices
  • 2 pz pumpkin in half moon
  • 10 pz green beans cut diagonally
  • 2 gr shoots of Horseradish and cilantro
  • 1 pz. Rice
  • 1 g salt
  • 1 g ground pepper
  • 60 g fish fillet
  • 2 pz shrimp 12-20 with a clean head
  • 4 pz Baby squid without tentacles
  • 2 gr olive oil
  • 1 lt water
  • 350 g fish with bone
  • 5pz garlic
  • 1 pz onion
  • 5 pz Chile guajillo
  • 2 pz Chile Ancho
  • 1 pc clove
  • 1 gr Cumin
  • 1 g cinnamon
  • 5 pz tomato
  • 4 pz Tabasco pepper
  • 1 pz Epazote washed and disinfected
  • 500 g shrimp shell
  • 500 g crab

1. 1. Put the water in a pot along with the bones of the fish, garlic, onion, salt and pepper
   2. Cook over medium heat, strain and reserve.
   3. Grille the cinnamon, cumin, chile guajillo, ancho, red tomatoes, garlic and onion.
   4. Sauté shrimp shell crab and add the above already roasted ingredients
   5. Cook until crab this well cooked and add the bones of fish, epazote, boil until softened chilies, blend all ingredients and strain
   6. Season and cook the seafood in a saucepan
   7. Boil the water already seasoned and cook the vegetables
   8. Decorate as shown in the photo and with buds serve the basis of mole
