Esperante Signature Dish
- scallop
- celeriac
- black pudding
Preparation

Esperante Signature Dish
- Heat the Oil until it is almost smoking in a non stick frying pan
- Add the nob of butter then the scallops sear till golden brown prior to turning this will only take about 1 minute each side
- season with a pinch of salt and rest prior to serving dry of on a piece of kitchen towel or J Cloth
- Slice the Black Pudding to finger width then cut to the same size of the Scallops
- These are pan fried in a little Oil rest prior to serving dry of on a piece of kitchen towel or J Cloth
- Cook the Celeriac in the milk till tender drain and mix with the butter and cream
- Pass through a fine sieve so it is extra smooth and light, Keep warm for serving
- Using an oblong plate place a swipe of celeriac puree, then position the scallop, black pudding ect along the plate in sequence serve immediately garnish with micro cress or pea shoots
