Lime pie with italian meringue and mascarpone

• Shortbread dough:

  • 200g - butter
  • 380g - flour
  • 100g - icing sugar
  • 60g (1,5pc) - egg
  • 15g - lemon juice
  • zest of 1 lemon

• Lime filling:

  • 800g - condensed milk
  • 250g - lime juice
  • 2pc - eggs
  • 8 pc - yolks
  • zest of 1 lime

1. Shortbread dough:

   1. Blend butter with sugar, add eggs, lemon juice, lemon zest and mix well
   2. Then add flour and mix until smooth(not too long)
   3. Purt dough into molds and bake at t 180-190°C for 10-15 minutes

2. Lime filling:

   1. Mix eggs, yolks, lime juice, lime zest until smooth and slowly pour in the condensed milk, simultaneously mixing.
   2. Put lime filling onto the base and bake in the oven at t 90-100°C for 60-70 minutes

3. Decoration:

   1. Decorate baked lime tart with whipped meringue
