Apple Sour Perlini Mocktail

• • 1/2 a green cooking apple
  • 15 ml Monin apple syrup
  • 20 ml lemon juice
  • 15 ml of apple juice
  • Thinly sliced apple to garnish

1. 1. Chop up your preferred apple – the sourer the better – add into a Perlini shaker
   2. Muddle fruit, mashing to a pulp
   3. Add the syrup, lemon juice and apple juice
   4. Top with ice and shake well
   5. Add the gas to give that added fizz
   6. Double strain into a prepared iced glass and garnish with a thin slice of apple - floating on the surface
