Chopped Taco Mason Jar Salad

• • 4 wide mouth quart size mason jars
  • 1 lb shredded Cajun-spiced chicken breast
  • 1 can black beans, drained
  • ½ cup chopped tomatoes
  • ½ cup chopped onions
  • 2 tbsp chopped cilantro
  • 2 avocados, chopped
  • juice from a lime
  • 1 cup cooked farro
  • 1 cup shredded Monterrey Jack cheese
  • 4 cups chopped romaine lettuce
  • salt and pepper to taste

1. 1. Finely shred / julienne cooked chicken and sprinkle with Cajun spice.
   2. Mix tomatoes, onions, cilantro and seasoning, add lime juice and keep aside.
   3. Divide ingredients among mason jars starting with avocado, tomato onion salsa then adding lettuce, farro, black beans, then the shredded chicken.
   4. Place lid on and close tight. No need to vacuum seal or anything like that.
   5. When ready to eat, shake well then pour into a bowl and enjoy. Can serve with chips (tortilla, pita or potato).
