Library Bar's featured cocktail is influenced by a Hemingway Daiquiri. We've kept the writer's favourite grapefruit and cherry liqueur combination, and replaced the rum with the earthy taste of our own Small Batch 14th In Line Dillon's Gin. Inspired by our rooftop garden located on the 14th floor, we added a rosemary-infused simple syrup, which in the summer months is grown in our urban back yard. Ernest always enjoyed his daiquiri with half the sugar and that is why you'll find this cocktail to be sweet, but end on a bitter note. Extremely refreshing and perfect to sip, it's an ideal welcome to spring and warmer weather ahead. The name "To Have And Have Another", came from Hemingway's popular 1945 novel "To Have And Have Not".
