Ingredients

Cocktail
- 1.5 calvados
- 3/4 pear puree
- 3/4 lime juice
- 1/2 house-made cinnamon syrup
- 1 bar spoon of ginger
- 3/4 egg white
- 4 dashes of Dillon's pear bitters

Candied Pears
- Slice a fresh pear, place on a banking sheet. Dust with simple syrup and place in the oven on low for a few hours, until the slices are dried.

Simple Syrup
- Using 1 cup of sugar, mix in 1 to 2 tsps. of cinnamon into a pot. Once the cinnamon and sugar are mixed well, add 1 cup of water. Brig to a boil, let simmer 5 minutes, until the liquid becomes clear

Cocktail Mix
- Using a shaker, add in the ginger (if using fresh ginger, this will need to be muddled), add in the Calvados, pear puree, lime juice, cinnamon syrup, egg white and 4 dashes of Pear Bitters.
- Add in a scoop of ice and shake until foamy (about 10 shakes), pour into a coup glass, dust fresh cinnamon on top and garnish with a dry candied pear slice!
