Smokin' Oaken

• • 1.5oz Victoria Oaken Gin
  • 0.5oz Calvados
  • 0.5oz Aperol
  • 1.0oz Reduced Spiced Apple Cider Syrup
  • 1 Wedge of Lemon
  • A few dashes of Bitters

1. To Make the Spiced Apple Cider Syrup:

   1. Using an Apple Cider, or good quality Apple Juice. Add the cider to a pot, add in desired spice (for this I used clove, cinnamon, nutmeg). Reduce the juice to syrup, approximately 2/3, add a spoonful of honey and stir. Strain mixture through a coffee filter, and allow to cool, then refrigerate. The syrup will last a week in the fridge. 2L of Apple Cider will yield 600ml of Syrup, or enough for about 20 cocktails.

2. To Make the Smokin’ Oaken:

   1. Measure the Gin, Calvados, Aperol, and syrup into a cocktail shaker, add the squeeze of lemon and dashes of bitters. Shake to mix and chill. Strain through a cocktail shaker into a Martini Glass. Garnish and serve

3. To Garnish:

   1. To enhance the smoky flavours of the Gin, I have rimmed the glass with a mixture of smoked hazelnuts, and smoked dehydrated apples that we crushed with a food processor. However dried apple slices, or amaretto soaked cherries would also be a great garnish
