Salted Squash Doughnuts & Smoked Duck

Ingredients
- Yield:

Squash Puree
- 1 cup diced Acorn squash
- 1/3 cup diced onion
- 1 tbsp diced butter
- 100ml olive oil

Doughnuts
- 1 ¼ cups water
- 2 Tbsp Butter
- Zest of 1 lemon
- Pinch of salt
- 2 tsp granulated sugar
- 4.5 oz organic white flour
- ¼ tsp baking flour
- 4 eggs
- 1 Tbsp Squash puree

Douglas Fir Syrup
- 500ml simple syrup
- 3 juniper berries
- 1 douglas fir tip slightly charred with a blow torch

Delicata Squash
- 2 delicata squash
- 2 Tbsp Olive oil
- Salt and pepper to taste

Smoked Duck
- 24 thin slices of smoked duck
Preparation

Squash Puree
- In a small sauce pot, sweat the onions in butter for 5 minutes then add squash and cover with salted water. Cook until tender, strain and puree in blender with the olive oil.
- Use this puree for the batter and piping into the doughnuts if desired.

Doughnuts
- Pour water, butter, granulated sugar, lemon zest and pinch of salt into a small sauce pan and bring to a boil. As soon as the water boils, add the flour and the baking powder all at once and begin stirring with a wooden spoon.
- Stir constantly until the dough begins to come away from the sides of the pan. Take off heat and allow to cool for a few minutes.
- When dough is no longer hot, but warm, stir in the eggs one by one and add squash puree. Use a mixer if needed, ensure the dough is smooth. Set aside for 1.5 to 2 hours. Place a teaspoon of batter in 300f deep fryer and fry until golden and fully cooked on the inside.

Douglas Fir Syrup
- Bring ingredients together in small sauce pan and boil until a syrupy consistency is achieved. Strain and reserve.

Delicata Squash
- Cut the ends off the squash and slice one of them into ½ inch circles, remove seeds and toss in olive oil, salt and pepper. On a low heat grill the rounds for about 4 minutes on each side or until tender. The skins are edible. For the raw squash take the left over rounds and with the help of a mandolin thinly slice the squash and then place in a bowl and season. You can add lemon juice and olive oil if desired.

Other Notes
It's a delicious fall appetizer inspired by local Vancouver Island ingredients. Pairs well with ice wine or local apple cider. If you're feeling adventurous, also pairs well with mulled wine and friends.
