Ingredients
- Yield:

Green Tomato Ketchup
- 200 g large red onion, peeled and roughly chopped
- 200 g bulb fennel, trimmed and roughly chopped
- 2 stick celery, trimmed and roughly chopped
- 250 ml grape seed oil
- 100 g fresh ginger, peeled and roughly chopped
- 50 g cloves garlic, peeled and sliced
- 3 poblano chopped and finely chopped
- 100 g green onion chopped
- 1oz fresh basil, leaves picked, stalks chopped
- 2 tablespoon coriander seeds
- 3 cloves (spice)
- 2 g ground allspice
- 2 rosemary springs
- 4 juniper berries
- 1 tsp Szechuan peppercorns
- 1 tsp freshly ground black pepper
- Pinch of sea salt

Salad Ingredients
- 2 Large Heirloom tomatoes
- 1 head baby iceberg (cut in ½ inch slices)
- 4 thick slices of cooked & smoked country style bacon
- 1 teaspoon chopped chives
- 8 basil leaves
- 2 teaspoons mayonnaise
- Cracked black pepper
- 1 teaspoon Juniper salt (2 juniper berries blended with 100g of salt )

Method for Ketchup
- Place all the vegetables in a large heavy-bottomed saucepan with rape seed oil, ginger, garlic, chili, basil stalks, coriander seeds and cloves. Season with the pepper and a good pinch of salt. Cook gently over a low heat for 10 to 15 minutes until softened, stirring every so often. Add all the tomatoes and 350ml of cold water, sugar, vinegar & raisins.. Bring to the boil and simmer gently until the sauce reduces by half. Turn off the heat and add the basil leaves blend the sauce with a stick b

Assemble Salad
- Slice tomato in 3. Season with juniper salt & pepper. Mix the mayo with the fresh herbs and place on the bottom tomato. Lay down the iceberg and cover with green tomato ketchup. Place the second layer of tomato on. Place cooked bacon and more ketchup on the top layer. Finally place the top of the tomato back on. To finish, drizzle olive oil and a sprinkle of juniper salt.
Other Notes
This salad is a modern day version of the BLT without the bread!
