Dark Matter Mustard

• • 600 ml Hoyne Dark Matter Beer
  • 15 ml yellow mustard powder
  • 180 ml yellow mustard seeds
  • 600 ml apple cider vinegar
  • 5 pods all spice
  • 4 pods juniper berries
  • 15 ml fresh thyme
  • 125 ml demerera sugar
  • 10 ml Kosher salt

1. 1. Mix beer, mustard powder and mustard seeds. Set into sealed container and let sit overnight to hydrate the mustard seeds.
   2. Bring vinegar, juniper, all spice and thyme to a boil. Whisk in sugar and salt until it dissolves. Set in fridge overnight to steep flavor and cool.
   3. On day 2 - mix hydrated mustard seeds and vinegar mixture. Heat in a heavy bottom pot on medium low heat until it simmers. Cook for 45 minutes until reduced by 25% and mustard seeds are soft.
   4. Allow to cool for 30 minutes in fridge.
   5. In a food processor, blend 80% of the mustard until smooth.
   6. Fold in remaining seed mustard to achieve a 'grainy' mustard texture.
