Holiday Macaroons

• • 1 cup powdered almonds
  • 3/4 cup icing sugar
  • 3 egg whites
  • 1/2 cup sugar
  • 1/2 teaspoon or more liquid red food coloring
  • 1/3 cup mint icing or marzipan

1. 1. Line a cookie sheet with parchment paper.
   2. In a food processor, grind the almonds and icing sugar until fine.
   3. Beat the egg whites with the food coloring until soft peaks form. Gradually add the sugar, beating constantly until the peaks are stiff
   4. Using a spatula, fold in the almond mixture and stir until mixture becomes soft.
   5. Using a pastry bag fitted with a plain tip, form the macaroons onto the cookie sheet.
   6. The macaroons should flatten slightly. Let dry at room temperature until the macaroons develop a thin crust, about 90 minutes.
   7. With the rack in the middle position, preheat the oven to 180°C (350°F).
   8. Bake 12 to 15 minutes. The macaroons should not brown.
   9. Let cool completely. Spread a thin layer of icing or marzipan between 2 macaroons.
