Date Squares

Ingredients

• • 2 cups pitted dates
  • 2 cups water
  • ½ cup orange juice
  • 5 orange zest (just the skin without the white)
  • 2 cups brown sugar
  • 3 ½ cups rolled oats quick cooking
  • 3 ½ cups flour
  • 3 ½ baking soda
  • 2 cups brown sugar
  • 1 pinch of salt
  • 2 eggs
  • 2 ½ butter into small cubes

1. 1. In a saucepan, combine the dates, water, orange juice, zest and brown sugar
   2. Boil gently and simmer for about ten minutes, until the formation of a paste. Set aside
   3. Combine flour, oats, baking soda, brown sugar, eggs and salt in a bowl, add the butter and mix lightly with your hands
   4. Dividing the mixture into two parts. Pour half in the bottom of a rectangular baking pan
   5. Spread the date paste evenly and cover with second half of dough
   6. Bake at 350 F 20-30 minutes, let cool before cutting into square.
