Spiced chocolate ring cake with candied fruits

Ingredients

- 125 gr 68% dark chocolate
- 150 gr butter
- 250 gr superfine sugar
- 120 gr egg yolk
- zest of 1 orange
- zest of 1 lemon
- 80 gr flour
- 40 gr cornstarch
- 10 gr cacao powder
- 1 gr ginger powder
- 1 gr cinnamon powder
- 1 gr Espelette chili pepper
- 1/2 vanilla pod, scraped
- 180 gr egg whites
- 1 gr salt
- 20 gr superfine sugar

- Preheat the oven to 300˚F (150°C).
- Butter a baba pan and sprinkle with sugar.
- 1 - Melt the following together using a bain-marie (ideal temperature 40˚C): dark chocolate, butter.
- 2 - Blanch together : superfine sugar, egg yolk, orange and lemon zest.
- 3 - Sift together: flour, cornstarch, cacao powder, ginger powder, cinnamon powder, Espelette chili pepper, vanilla.
- 4 - Whip to foam: egg whites, salt, superfine sugar.
- Prepare the batter as follows: mix 1 and 2, add 3 to the mix, the finish by adding 4.
- Pour the batter in the pan and cook for about an hour. Let the cake cool, then garnish with candied fruits from Marché Artisans.
