Pulled pork tacos

• • 250gr pork shoulder
  • BBQ sauce
  • 4 sundried tomato flavored taco shells
  • 15ml red pepper coulis
  • 10gr yellow tomatoes
  • 10gr red tomatoes
  • 20gr chorizo
  • 1 Boston lettuce leave
  • Basilic oil
  • 1 basil leave

1. 1. Marinate the pork shoulder in the BBQ sauce for 12 hours, then cook in the oven for 3 hours at 275 F.
   2. Cook a red pepper in boiling water. Peel and remove seeds. Puree in a blender with 50gr of cream.
   3. Dice the chorizo and roast in oven at 350 F.
   4. When cooked, pull the pork meat apart with two forks. Place in taco shells.
   5. Garnish with diced tomatoes and shredded lettuce.
   6. Decorate the plate by drizzling basil-flavored olive oil, basil and the pepper coulis.
