Cinnamon Buns

• Cinnamon Buns

  • 266g warm milk
  • 2 eggs
  • 100g butter
  • 600g flour
  • 6g salt
  • 100g sugar
  • 10g instant yeast
  • 10g vanilla

• Cinnamon Sugar

  • 220g brown sugar
  • 22g cinnamon powder

• Cream Cheese Icing

  • 85g cream cheese
  • 10g butter
  • 171g icing sugar, sifted
  • 2g vanilla
  • 10g milk

1. Cream Cheese Icing

   1. Place cream cheese into mixing bowl and mix with paddle attachment until completely smooth, no lumps.
   2. Add butter and paddle until smooth, scraping bowl as necessary.
   3. Add the sifted icing sugar, mix, and then add in milk and vanilla and mix until smooth. Set aside.

2. Cinnamon Buns

   1. Melt the butter and add the milk, heat to 110F.
   2. Sift your flour and put into a mixing bowl with a dough hook. Add in salt, sugar and yeast.
   3. Add eggs, liquid mixture and vanilla and mix on medium speed for 7 minutes until a smooth dough is formed. Cover and let rest 30 minutes.
   4. Roll the dough into a rectangle 33” x 10” and brush with melted butter then sprinkle the cinnamon sugar mixture evenly over the dough.
   5. Loosely roll the dough into a log and let rest for about 5-10 minutes.
   6. Cut into about 1.5” pieces. You should have about 20 mini cinnamon buns.
   7. Put onto a parchment lined sheet pan spaced apart 5x3 and bake at 350F for roughly 10 minutes until lightly golden brown.
   8. Take out of oven and while still hot, glaze with the cream cheese icing and allow to cool.
