BITE ME: SUPER BOWL SUNDAY BEEF & BACON MEATBALLS

• Meatballs

  • 2 cups ground beef
  • ½ cup ground bacon
  • ½ onion
  • 1 clove garlic
  • 1 tbsp Italian parsley
  • 1 lemon zest
  • 1 egg
  • 1 slice white bread
  • ¼ cup buttermilk
  • 1 tbsp parmesan cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground fennel

• Red Pepper Marinara

  • ½ red pepper
  • ½ onion
  • 1 clove garlic
  • ½ cup white wine
  • 2 cups tomato purée
  • 2 Tbsp olive oil
  • 1 Tbsp basil
  • 1 Tbsp oregano
  • 1 small piece of parmigiano reggiano
  • 1 tsp salt
  • 1 tsp pepper
  • Extra virgin olive oil

1. Meatballs

   1. Remove crust from white bread slice and dice into cubes. Soak bread in buttermilk. Set aside.
   2. Finely chop onion and Italian parsley, and then add bacon and ground beef in a mixing bowl and mix together.
   3. Into the mixture add grated garlic and lemon zest, as well as parmesan cheese, ground fennel, black pepper, salt, buttermilk soaked bread and egg and mix.
   4. Use a 2 oz. ice cream scoop to form even sized meatballs. In heated pan with olive oil, sear meatballs and set aside.

2. Red Pepper Marinara

   1. Finely chop red pepper, onion, garlic, oregano and basil.
   2. Heat saucepan on medium heat, add olive oil and start to sauté garlic and onion until soft then add red pepper, salt and pepper.
   3. Cook until red peppers are soft and get little colour.
   4. Add white wine reduce heat by quarter, then add tomato purée and seared meatballs.
   5. Bring mix to gentle simmer and cook for 20-30 minutes until the meatballs is cooked through and tender. Add chopped oregano.
   6. Serve with fresh grated parmesan cheese, basil and drizzle with EVOO.
