Bite Me: Diavola Chicken Pizza

  • ⅓ cup sliced Capicola
  • ½ cup shredded roasted chicken breast or thigh (salt and pepper to season)
  • 1 tbsp peperoncino oil (chili oil)
  • 5 julienned basil leaves
  • ⅓ cup ricotta
  • ½ cup buffalo mozzarella
  • ¼ cup tomato sauce
  • ⅞ cup pizza dough
  • 1 cup semolina flour
  • 1 cup bread flour
  • Chili flakes
  • Baby basil

1. Preparation

   1. Pre-heat oven to 450 degrees F. Lightly season one room-temperature chicken breast or thigh with salt and pepper and place in a roasting pan. Roast for 50 minutes in the pre-heated oven or until the thickest part of the chicken reaches 165 degrees F.
   2. Roll together and julienne the basil leaves. Set aside.
   3. Thinly slice the Capicola. Set aside.
   4. Hand shred cooled chicken breast/thigh and place in a mixing bowl. Drizzle with peperoncino oil and mix well. Set aside.
   5. On a large plate, put 1 cup of bread flour and dredge the dough in the bread flour until no longer sticky. Begin to shape the dough and work into about a 12-14 inch round.
   6. Sprinkle semolina flour on the pizza paddle or metal tray to ensure the dough does not stick.
   7. Place ingredients on dough, starting with the tomato sauce.
   8. Heat the oven to 475 F. Slide pizza into oven and bake for approximately 12-15 minutes.
   9. Garnish the cooked pizza with peperoncino oil, baby basil and chili flakes after it comes out of the oven.
