Rotisserie filet mignon wrapped in bacon "à la Charlevoix" and wine tomato sangria

Ingredients

• Filet Mignon

  • 1.2 kg Cleaned filet mignon
  • 5 tbsp. Dijon mustard
  • 15 g favorite steak spice
  • 500 g bacon
  • Parchment paper
  • Mini toothpicks soaked in water

• Shrimp skewers

  • 24 jumbo shrimp
  • Large brochettes soaked in water
  • Large brochettes soaked in water

• Potatoes

  • 680 g baby potatoes
  • 75 g duck fat
  • 3 sprigs Fresh rosemary
  • Salt and black pepper

• Vegetables

  • Choose your favorite vegetables for the BBQ
  • Balsamic vinegar marinade

• Wine tomato sangria

  • 750 ml. Omerto tomato wine
  • 375 ml. White cranberry juice
  • 375 ml. Sprite
  • 3 sprigs Fresh rosemary
  • 12 Cherry tomatoes cut in half (multi-colored)
  • 12 Slices cucumber
  • Ice cubes

1. Filet mignon, shrimps and vegetables

   1. Sear the filet on a very hot barbecue, take off and rub with the mustard and steak spice. Let cool in the fridge for at least 1 hour.
   2. Turn on the rotisserie section of the barbecue, you want to start the roasting at 500 degrees
   3. Lay the bacon on the parchment paper and intertwine the pieces to make a solid sheet of bacon. Wrap the bacon around the filet and secure in place with the mini toothpicks
   4. Slide the rotisserie arm through the filet and tighten the spikes in place (be sure not the squeeze the meat between the spikes)
   5. Put the potatoes on the bbq the same time you start the filet
   6. Cook at high temperature for at least 10 minutes, then turn down to 350 degrees for about another 30 minutes, cook to 125 degrees for a beautiful medium rare
   7. When the filet is cooked, set aside, the filet needs to rest for at least 15 minutes
   8. While the filet resting, cook the vegetables about 7-8 minutes depending on their size and bbq heat, set the vegetables aside and cook the shrimps, for 3-4 minutes on each side

2. Sangria

   1. Mix all ingredients together, serve and watch the expression of joy pass over your friends faces!
