Charlevoix style grilled cheese sandwich

Ingredients

• Charlevoix style grilled cheese sandwich

  • Slice whole wheat bread
  • 15 g Bio Proscuitto
  • 15 g Bio dried sausage
  • 15 g Duck leg confit, from the ferme basque
  • 34 g 1608 cheese
  • Chorizo and tomato ragout
  • Roquette
  • Red and green cabbage salad with green apples
  • Mayo chipotle
  • Julienne french fries, salt and pepper

  • ¼ red cabbage
  • ¼ green cabbage
  • 3 green apples
  • 30 ml cider vinagar
  • 10 ml honey
  • 60 ml oil
  • Salt and pepper to taste
  • 2 carrots julienned
  • Chopped coriander

• Chorizo and tomato ragout

  • 450 gr Chorizo
  • 1 white onion
  • 200 gr tomates
  • 60 ml apple cider
  • 1 l orange juice
  • 60 gr sugar

1. Chorizo and tomato ragout

   1. Saute the diced onions with a little oil and add the diced chorizo and cook for another 10 minutes.
   2. Deglaze the mixture with the apple cider, add the sugar and orange juice and reduce until the consistency of a syrup.
   3. Let the mixture cool down and add the tomatoes.
