Charlevoix Deep Dish Pizza

Ingredients

• Dough

  • 300 gr Flour
  • 6 gr salt
  • 4.5 gr yeast
  • 195 ml water

• Topping

  • 350 gr grated Migneron cheese
  • 300 gr grated St Fidèle Cheddar cheese
  • 60 gr of sliced Charlo chorizo
  • 4 roughly chopped medium size Heirloom tomatoes
  • Oregano, thyme, rosemary, salt and pepper
  • Olive oil

1. Dough

   1. Mix all the ingredients in a bowl and let the dough rest at room temperature for 8 hours
   2. In a floured bowl put the dough to rest in the fridge for 3 days, take it out two hours prior to dressing
   3. Flaten out to a 12” circle and dress the dough in an oiled deep pan 2” deep. Precook the dough for 15 minutes at 350 F

2. Dressing

   1. Mix all the topping ingredients together and dispose on the dough
   2. Drizzle the olive oil on top and cook at 375 F for half an hour
   3. Let rest 2-3 minutes and serve with your favorite fries or salad
