Ingredients

• • 2 oz Whisky Glenmorrangie 10 years
  • 2 oz Calvados Boulard Grand Solage
  • 2 oz "Noble 2" Maple syrup
  • (aged in bourbon barrel, infused with cardamone)
  • 1/2 Fresh Pear

1. 1. Warm a coffee pot on direct fire.
   2. Pour in the pear chopped in very small pieces and let cook while stirring it until it starts caramelizing.
   3. Add the maple syrup and let cook for a minute or two.
   4. Dash the whisky and calvados, bring to high heat. Get the flame close to the pot so that it starts flames.
   5. Work the drink as a blazer for 2 to 3 minutes. The mix should be simmering in your pot.
   6. Pour it on tempered glass alongside a small spoon and a slice of pear.
