Crispy Bean Curd Roll with Chilled Mango Sauce

• • 1 piece Bean curd skin
  • 400g Bean curd (mashed)
  • 10g Coriander (mashed)
  • 10g Carrot (minced)
  • 20g Mushroom (cubed)
  • 100g Mango puree

• Ingredients for garnish:

  • Fresh mango (chopped)
  • Red chilli (chopped)

1. • Mix mashed bean curd with coriander, mushroom and carrot.
   • Place mixed paste onto bean curd skin and wrap into a roll.
   • Deep-fry till golden brown.
   • Pour mango puree over the fried bean curd roll.
   • Garnish with fresh mango and chilli.
   • Ready to be served.
