Honey Cured BBQ Salmon

Ingredients
- Yield:
- Serves 8

- 1.5 kg salmon fillet, scaled with skin on (1 per serving)
- 3 cups honey
- 1 cup rice vinegar
- Coarse cracked black pepper
- Kosher salt
- Chopped chervil
- 1 pan apple wood chips, soaked for ½ hour and drained

- Season salmon with kosher salt.
- Mix rice vinegar and honey until honey is dissolved, pour in a pan and lay salmon in, flesh side down.
- Marinate overnight.
- Drain off honey marinade and liberally sprinkle the flesh side of the fillet of salmon with cracked blacked pepper.
- Heat up BBQ and turn to low.
- Set pan of chips on top of BBQ elements or coals and allow it to get smokey.
- Place salmon fillet, skin side down, on the grill.
- Close the lid and cook for 15 –20 minutes, keeping the heat low and as much smoke as you can produce.
- Remove from grill and sprinkle with chopped chervil.
- Serve at once.
