Bermuda Rockfish with Lemon Caper Sauce

• Bermuda Rockfish Recipe

  • 8 oz Fresh Bermuda Rockfish (or alternate fish of your choice)
  • 2 oz all-purpose flour
  • 2 oz Vegetable Oil
  • Salt & Ground Fresh Pepper to taste

• Lemon Caper Sauce

  • 1/2 Lemon
  • Dash of Worcestershire Sauce
  • 1/2 oz flat parsley leaf
  • Dash of Tabasco
  • Cold, Unsalted Achor Butter
  • 2 oz White Wine
  • 1 oz Capers
  • 2 oz Shallots

1. • Season rockfish fillet on both sides and lightly flour rockfish
   • Sear rockfish in non-stick pan over medium flame with vegetable oil.
   • Develop as much colour as possible while cooking the fish through, but without burning or over-cooking.
   • Remove fish from pan & place to side.
   • Remove any excess oil from pan & sauté shallots until golden brown.
   • Deglaze with white wine and reduce over medium flame until only a small amount of wine is left in pan.
   • Add capers, Tabasco, Worcestershire Sauce, and squeeze of lemon.
   • Remove sauce from flame & add cold butter (keep the butter moving in pan until completely melted).
   • Serve Rockfish with Lemon Caper Sauce garnish.
