Tomato Chutney

Ingredients

• For Tomato Chutney

  • Hot house tomato, Diced - 2cups
  • red onion, diced - 1/4 cup
  • Roasted garlic cloves, sliced - 6 cloves
  • olive oil - 2 Tbsp

• For after cooling:

  • 4tbsp chopped fresh tarragon
  • 2 tbsp sugar
  • 2 tbsp sherry vinegar
  • salt and pepper to taste

1. • Toss together ingredients and oven roast at 400F for 30-45 min.
   • Cool and add the "after cooling" ingredients
