Orange Pavlova with Pumpkin Spiced Whipped Cream and Cranberry Compote

• PAVLOVA

  • 250 grams Egg White (8 eggs)
  • 250 grams White Sugar
  • 150 grams Icing Sugar
  • 1 Zest from Orange

• WHIP CREAM

  • 500 grams Heavy Cream
  • 30 grams Icing Sugar
  • 5 grams Pumpkin Spice

• CRANBERRY COMPOTE

  • 500 grams Fresh Cranberries
  • 100 grams Orange Juice
  • 300 grams White Sugar
  • 10 grams Vanilla

1. PAVLOVA

   1. Place egg whites and sugar into a mixing bowl and beat with a whisk until light, fluffy and holding firm peaks.
   2. Mix in icing sugar and orange zest.
   3. Scoop onto a baking sheet lined with parchment paper into small discs and bake in a 325F oven until golden brown. (Approximately 12 minutes).

2. WHIP CREAM

   1. In a mixing bowl, combine all ingredients and whip until firm.

3. CRANBERRY COMPOTE

   1. Combine all ingredients into a large pot and over low-medium heat, cook down until thick.
   2. Cool down quickly.

4. ASSEMBLY

   1. Scoop the pumpkin spiced whipped cream into the center of the pavlova followed by the cranberry compote.
   2. Garnish with an assortment of fresh fruits and berries.
