Ingredients

Mac and Cheese
- 1 serving Mac and Cheese Sauce
- 2 tbsp. Panko Japanese Style Bread Crumbs
- 2 ounces Whole Wheat Macaroni Pasta, dry
- 1fresh carrot, cut into strips
Mac and Cheese Sauce
- 1-1/4 cups Chicken Soup Stock
- 1.5 Tbsp Organic heavy whipping cream
- .75 ounces Unsalted butter
- .75 ounces Organic, unbleached white flour
- .75 ounces Parmesan Cheese, grated
- .75 ounces Monterey Jack Cheese, shredded
- .5 ounces American Processed Cheese
Preparation

Mac and Cheese
- Cook the pasta in a pot of boiling water until al dente.
- At the same time, heat cheese sauce in a pan over medium heat.
- Add cooked pasta to the sauce and toss to coat evenly.
- Place in an oven-proof dish and top with Panko breadcrumbs. Gratinée under the salamander.
- Serve with carrot sticks on the side.
Mac and Cheese Sauce
- In a large pot, make a roux with the flour and butter.
- Slowly incorporate the chicken stock and cream, whisking constantly to prevent lumps.
- Bring to a boil and reduce to simmer.
- When sauce is thick, add the cheese in small batches and whisk.
- Cook for 20 minutes and adjust seasonings to taste.
- Yields sauce for 6 portions.
