Old World Gingerbread Cookies

  • Sugar 135g
  • Bread flour 100g
  • Lemon & Orange peel 50g
  • Ground Hazelnut 50g
  • Clove 4g
  • Nutmeg 2g
  • Cinnamon 4g
  • Salt 2g
  • Egg white 80g
  • Baking soda 2g

1. 1. Place all dry ingredients in a kitchen mixer bowl. Add egg white and mix the mixture approximately 3 minutes or until smooth. Pipe with a pastry bag into round Gingerbread cookies ,30 % smaller than the final desired size, on a baking sheet pan, lined with parchment paper
   2. Bake in a 190 Celsius pre heated oven for approx 12-14 minutes . Cover the cooled down Gingerbread cookie with tempered Dark chocolate covertures or royal icing
