Honey Glazed Pear Almond Tart

Ingredients

Yield:

Dozen Tarts

• Sweet Tart Dough

  • 340g butter
  • 167g sugar
  • 2g salt
  • 1 large egg
  • 1/2tsp vanilla
  • 500g all purpose flour

• Almond Frangipane

  • 250g butter
  • 250g sugar
  • 250g ground almonds
  • 225g eggs
  • 45g pastry flour

• Honey Poached Pears

  • 250g honey
  • 250g sugar
  • 500ml water
  • 1 vanilla bean, split
  • 2 pears, peeled, halved and cored

Total Time:

90 Minutes

1. Sweet Tart Dough

   1. Cream butter sugar and salt
   2. Add egg and vanilla
   3. Add flour and mix until dough forms
   4. Wrap well and rest in fridge at least 30 minutes before rolling
   5. Roll dough out and line tart shell, rest in fridge another 30 minutes before baking
   6. Lightly dock bottom of tart shell with fork, par bake in 350 F oven for approximately 10 minutes

2. Almond Frangipane

   1. Cream butter, sugar and ground almonds well
   2. Add eggs slowly
   3. Add flour and mix just until combined

3. Honey Poached Pears

   1. Bring sugar, honey, vanilla bean and water to a simmer
   2. Add pears and cook on a gentle simmer for 10-15 minutes until cooked
   3. Allow pears to cool in syrup

4. Putting It All Together

   1. Spread a thin layer of your favourite jam (we chose blackberry) on par baked shell
   2. Fill 3/4 full with frangipane
   3. Top with pear slices or quarters in decorative fashion, sprinkle with sliced almonds
   4. Bake at 325F until almond filling is set and springs back when touched.
   5. Bring honey to a simmer and brush tart liberally while still warm from the oven.
