Carmelized Pear Tatin

• • 1.5 cup of sugar
  • 1.5 cup of butter
  • 15 pears, peeled and cored (preferably Conference)
  • 20 oz. Puff Pastry

1. 1. In a “tatin” pie mold, usually 10 to 12 inches in diameter, cook ½ cup of butter and ¾ cup of sugar until caramelized.
   2. Let cool a few minutes
   3. Arrange 20 halves of pears vertically in the mold and top with the remaining pears sliced very thin, then add the remaining sugar and butter.
   4. Cook about 75 minutes in an oven at 400°C with aluminum foil cover.
   5. Then drain ½ of the juice.
   6. Roll out puff pastry ¼ inch thick and place on top of pears.
   7. Cook about 15 to 20 minutes
   8. Let cool and unmold by turning upside down.
