Honey Infused Pecorino Cheese on a Cedar Plank

• • 4 of 10cm x 10cm pieces of cedar
  • 4 of 1 ½ oz wedges of pecorino cheese
  • ¼ cup honey
  • 12 sprigs of thyme
  • 8 sprigs of lavender

1. • Marinate the honey with the thyme, and 4 sprigs of the lavender overnight.
   • Place the cheese on the cedar, drizzle a little honey over it and proceed to put a light burn on it with the blowtorch
   • Garnish with remaining lavender sprigs and serve immediately
