Lemon Thyme Cake Pops

Ingredients

Yield:

2 Dozen

• Lemon Curd

  • 75g egg yolks
  • 100g eggs
  • 110g sugar
  • 100g lemon Juice
  • 150g butter
  • fresh thyme

• Pound Cake of Your Choice

  • White Chocolate Ganache

    • 325g white chocolate
    • 125g cream

1. Lemon Curd

   • Mix first 4 ingredients together and cook on top of a bain marie whisking constantly until thick
   • Cool slightly and then emulsify in the cold butter with an immersion blender until the butter is well incorporated.
   • Stir in some chopped thyme to taste.
   • Cool.

2. Ganache

   • Bring the cream to a boil.
   • Stir in the chocolate until melted.

3. Cake Pop

   • Place the cake in a kitchen aid and process until it is crumbled.
   • Add enough lemon curd and ganache to make the crumbs stick together.
   • Scoop into desired size and insert the lollipop stick.
   • Freeze.
   • Dip in melted chocolate (if using white chocolate you can color it with food coloring) and let set.
   • *You can simply buy your favorite lemon curd if you wish to save some time and effort!
