Lavender Mint Shortbread

Ingredients

Yield:

2 dozen cookies

• • 140 g butter (soft)
  • 55 g sugar
  • 15 g icing sugar
  • 3 g dried lavender buds
  • 1 g lemon zest
  • 1 g chopped mint
  • 130 g all purpose flour
  • 25 g cornstarch
  • 1 g salt

1. • cream butter and sugars together
   • add herbs and lemon
   • mix flour with cornstarch and salt, add to butter
   • roll into log and chill
   • cut to 1/2 " thick cookies
   • bake for 9-12 min at 325F until slightly golden
