Honey & Five-Spice Roasted Rockfish

Ingredients

Fish
- six 6 oz. fillets Rockfish
- 1/4 tsp. five-spice powder
- Kosher Salt
- Freshly Ground Black Pepper
- 1/2 Tbsp. Olive Oil
Honey Sauce
- 1/2 Tbsp. Olive Oil
- 1/4 Cup Orange Juice
- 1/4 Cup + 2 Tbsp. Fish Stock
- 1/4 Cup heavy cream
- 1 tsp. fresh Ginger
- 1/4 Cup + 2 Tbsp. Honey
- 1/2 Cup low-sodium Soy Sauce
Preparation

For the Fish
- Place the fish in a mixing bowl and add the five-spice powder, a generous pinch of salt, a few grinds of pepper and half the olive oil
- Toss until all fillets are well-coated
- Preheat a cast iron or non-stick pan over medium-high heat.
- Add the remaining oil to the pan and tilt to coat the entire surface with oil
- Once the oil is shimmering, place fillets one at a time in the pan, skin side up
- Cook for 3-4 min., then flip and cook until cooked throughout, about 3 more min.
- The fish should be firm to the touch
- Remove from pan and let rest for 4-5 min.
For the Sauce
- In a heavy bottom saucepot, combine orange juice and stock
- Bring to a boil and reduce by half, about 5 min.
- Reduce heat to medium and add the cream, ginger, honey and soy sauce
- Reduce until the sauce coats the back of a spoon, about 10-20 min.
- Taste and adjust seasonings, if needed
