Executive Chef Morgan Wilson has taken the helm of Victoria’s most renowned hotel, leading a team of over 80 culinary professionals. BC born and raised, Chef Wilson is eager to leverage the abundant bounty of Vancouver Island into his culinary art.
A second generation chef, Chef Wilson was introduced to the kitchen in 1987 through an after school job. He quickly crafted his talent and passion, holding progressive careers with Delta, Marriott and Four Seasons hotels in Germany, Australia and Canada.
Chef Wilson is a Certified Chef de Cuisine and a Bocuse d’Or Laureate, having represented Canada in Lyon, France in 2005. Chef ranked 8th and earned the distinction of the highest rank of a non-European chef in the competition. Chef Wilson is one of eight chefs on Team Canada participating in the Dubai World Hospitality Championship, November 17-19, 2013. Further accolades for Wilson include Marriott Hotel’s Global Chef of the Year and the Rising Star award for excellence in dining, leadership and innovation.
Chef Wilson describes his culinary style as one without borders, always evolving and incorporating international influences. He believes great cuisine involves two simple ingredients: top quality products with flawless technique.
